His experience spans from intimate butcher shops and high-energy restaurants to the Culinary Institute of America, where he completed an accelerated culinary program. These influences, combined with his respect for nature and tradition, shape the exceptional quality he brings to Woodlands Charcuterie.
Drawing on European and American traditions, including French, Italian, Spanish, German, and Polish influences, Thibault blends these with a California-inspired approach. “I would say traditional preservation techniques with California influence,” he describes, adapting time-honored methods to the local environment and seasonal ingredients.
