Rosso Pizza at the Saturday Market

John Franchetti, who used to man the oven at Tra Vigne, started this Santa Rosa Pizzeria in Creekside Center and is already making a name with a puffy artisan pizza. The wood oven is the centerpiece in the kitchen, with counters on either side where you can watch the three guys form the dough, stretch it and sometimes give it a meager toss.

Style: Thin-crust Neapolitan style.

Oven: The Mugnaini wood-burning oven fires the pizza to 715 degrees for 2.5 minutes.

Crust: It’s one of the seven wonders of the pizza world: a crust that’s puffy and blistered around the edges, with a bread-like quality, thin shell of crispness in the center, and just the right amout of chewiness to exercise the jaw but not wear it out.

Pizza tried: I veered from the standard Margherita and went for the Beppo, with a sprightly tomato sauce base, Hobbs pepperoni, black olives, slivers of red onions and a thin glaze of housemade mozzarella.

We also tried the “white” style, Moto Guzzi. House-smoked mozzarella and sweet Italian sausage play off the sweetness of long-cooked sweet onions and the punch of wilted Swiss chard. Both toppings accentuated but didn’t upstage the crust. In all, some of the best pizzas I’ve had.”

John Franchetti is new to selling at the Santa Rosa Farmers Market but not new to shopping here. Long a supporter of using local produce Franchetti is a market regular. Freshly made (at the stand) mozzarella cheese is also available.

The mobile wood-fired pizza oven is designed for catering and Gesine Franchetti will plan the perfect pizza party with you.

Despite the 100 degree temperatures, the Rosso pizza crew was excited and happy to be taking their pizza on the road.
