Poblanos

“I was thinking about this at the Santa Rosa farmers Market last Saturday when I spotted the first poblanos of the year, at Beet Generation’s stall. The moment is nearly as thrilling as when I finally find a perfect and perfectly delicious tomato.

Poblanos are a mild to mildly spicy chile, generally harvested when dark green, that have broad shoulders and pointed tips. They are essential to posole and make my favorite chile rellenos. Unlike some chiles that get mushy when cooked, poblanos retain their texture unless you cook them to death, so to speak. Their flavor is unsurpassed. read more and get recipes
