Garlic Scapes from the Santa Rosa Original Certified Farmers Market
Garlic Scapes are a fleeting find at the Santa Rosa Original Certified Farmers Market. You will probably only find them for the next two weeks. What is a garlic scape? It’s the stem and unopened bud from a garlic bulb. It has a great garlic flavor and it is also a little vegetal in flavor, so it is super fun to use in recipes. I used garlic scapes in all kinds of dishes this week, from fritattas, to salad dressings and marinades, and this recipe treats the garlic scape like a veggie, instead of a flavor enhancer.

Stir-Fry with Chicken, Green Beans, and Garlic Scapes
3/4 cup water
1/4 cup soy sauce
1 tablespoon corn starch
1/2 teaspoon toasted sesame oil
1/2 teaspoon thai chili sauce
1 chicken breast, sliced into thin strips
2 tablespoons vegetable oil
3/4 pound green beans, trimmed
1 tablespoon of minced fresh ginger root
1/4 pound garlic scapes, top buds removed and cut into bit-sized lengths

Prepare sauce by combining first six ingedients. Set aside. Cook chicken in 1 tablespoon of oil over medium high heat until cooked through and just starting to get golden. Remove chicken and set aside. Add green beans and rest of vegetable oil to pan. Cook beans for about 3 minutes, then add garlic scapes. Cook scapes and beans for about 2 mintues, then add ginger. Briefly cook (about 15 seconds) then turn heat down. Add chicken and sauce. Cook for 30 seconds to 1 minute to reduce sauce and heat chicken through. Serve with rice. Makes about 4 servings.
