Celebrate Chinese New Year with Pegi’s easy won ton soup

Our market manager is a great cook – this is Pegi’s easy won ton soup recipe
Wonton Soup
This is the basic recipe for wonton filling and soup, but I love adding additional ingredients to my soup, I believe it is then called Wor Wonton
Ingredients: (measurements are a guide, not the law)
½ pound boneless pork, coarsely chopped 1 teaspoon chopped fresh ginger root
6 Fresh Mushrooms sliced (set aside 1 tablespoon 3 Green Onions diced, set aside 1 tablespoon
2 ounces peeled shrimp, finely chopped 24 3.5 square wonton wrappers
1 teaspoon brown sugar 4 cups chicken stock
1 tablespoon Chinese rice wine 1 medium head Bok Choy torn in 2” pieces
1 tablespoon soy sauce 16 snow peas (optional)
1 Dash soy sauce
1 Dash sesame oil
Directions:
Finely chop 1tablespoon green onion and 1tablespoon mushroom, place in bowl with chopped pork, chopped shrimp,
Sugar, wine, soy sauce & ginger, let sit 15-20 minutes
Place 1 teaspoon of the filling in the center of each won ton skins. Moisten all 4 edges of wonton wrapper with water, fold one corner over the filling to the opposite corner to form a triangle, press edges to make a seal, bring left and right corners together over filling, overlap and press together. Fold remaining corner back to form a dumpling.
Bring chicken stock to a boil in a large saucepan over medium heat. Drop the wontons, one by one into the broth; let them cook for 3-5 minutes, until they float to the surface. Reduce heat to a simmer, and gently stir in Bok Choy, reserved mushrooms and pea pods. Garnish with the remaining green onions and dash of soy sauce and sesame oil, serve immediately.
