It’s grillin’ time and about the best (easy) thing you can do on a grill is the bacon-cheese burger. No, not the burger with the bacon and cheese on top — the one with the bacon mixed in with the beef and the cheese is stuffed inside. A Jucy Lucy on steroids.
Start at Heather’s custom meat – she has bacon and ground beef. About a 3:1 ratio. Chop the bacon as fine as you can – a food processor works if you don’t have a grinder. And you can do it by hand. Mix it in. This burger also works with sausage instead of bacon.
For each burger make two patties and stuff them with your favorite cheese. Seal them up – you don’t want cheese leaking. Cook about 5 minutes a side. There are some great buns at the market, lettuce, tomatoes and a condiment for every taste. Personally, some jalapeno relish would be great.
